Grilled Blackened Chicken Sandwich with Blue Cheese

I had a real craving for something with a bit of bite a few days back. I was not looking for anything too spicy, but I did have a craving for something with a different heat. I decided I wanted a seasoned piece of meat that would be packed with a ton of flavor. I decided on a blackened seasoned chicken breast. Now sure, I make rubs all of the time for ribs, and smoked pork shoulders, but this latest batch of seasoning included that of a blackened mix.

Blackened anything is truly divine, and you can do whatever the heck you want with this spice mix. Use it on chicken, pork, fish, or burgers, it is a winner every time.

This simple simple throw together seasoning mix will not only last you for a few meals, but it will be a real crowd pleaser at your next barbecue.

Combine all of your spice  ingredients into a bowl, mix well, and store into an airtight container, preferably in a dark place.

Preheat your grill to a medium-high heat.  Liberally season your chicken breasts with the blackened spices. Slice and butter your buns.

Grill the chicken breasts for about 6-8 minutes per side. The color of the chicken will change slightly due to the sugar and wonderful spices. When you are about finished grilling the chicken, throw on the buns to lightly toast.

Remove the buns from the grill and lay a breast on each bun. Top with the crumbled blue cheese, and dig in.
