it’s simple and delicious.
This past week I was on my way to making giardinera, and as part of my vegetable medley, it included cauliflower. I’m going to be upfront and tell you that it has been some time since I have cooked with cauliflower. I can probably tell you why it has been so long, and it is due to my growing up where you would be served the whole head of cauliflower with cheese over the top. Not that was bad or anything, but I think the vision alone kept me from making anything with cauliflower for some time. But here I was, stuck with some cauliflower.
When I asked my wife what she would like me to do with the cauliflower, she was a bit confused. I immediately thought what could be done with this cauliflower that would be really good? The answer was easy, butter, a different type of cheese, and some breadcrumbs.
Ingredients:
Preheat your oven to 350 degrees. Steam your cauliflower for about 5 minutes. In the meantime, completely melt the butter, then add the breadcrumbs. Add the cauliflower to the butter and breadcrumb mix, and gently mix together.
Add this to your small casserole dish, top with parmesan cheese, and bake for 20 minutes. Both my wife and I fully agreed, that this one will served throughout the year.

Check out the post I did about roasted cauliflower with cheese. You might find that you really like the taste of it prepared that way. I don’t usually care for cooked cauliflower at all, but I enjoy roasting it. And topping it w/ good cheese makes it even better.
