Peanut Butter, Banana, and Bacon Sandwich

The title says it all. It’s a mouthful of awesomeness. I have been wanting to make a bacon and peanut butter sandwich for my oldest kid for some time. I only wanted to make it because peanut butter and bacon are probably his two favorite things to eat. A peanut butter sandwich is packed in his lunch on a daily basis, and he probably dreams of bacon, he loves it so much. Unfortunately my oldest kid is going to have to wait for this sandwich to come around again, but my daughter, on the other hand, was fortunate to see this sandwich be created.

Peanut Butter Banana Bacon Sandwich

See, last week it was my turn to stay home with her as she was coming off a pretty bad cold. As she watched Strawberry Shortcut on television, and I worked remotely on my laptop at the kitchen table, lunch time was growing near. As I often scan the pantry and refrigerator for things to create, I remember how I had been wanting to make this sandwich, and I thought it would be a nice pick me up for my daughter. After all, she loved the classic peanut butter and banana sandwich, and she likes bacon (who doesn’t), so I decided she would be the one to devour this treat.


Let’s get started.

Begin by taking a slice of the white bread, and brush on some of the reserved bacon fat from the cooked bacon (yes, I said it) on the outside of the slice.

Place one slice of the bread, bacon fat side down on a large skillet. Spread a decent amount of the peanut butter onto the slice of bread. Top with two slices of the cooked bacon, add the sliced banana on top of the bacon, then top with two more slices of bacon. Take a bit more peanut butter and spread on the remaining slice of bread, and place peanut butter side down on top of the bacon. Brush a bit more bacon fat on to the top of the bread.

On medium heat, begin making your sandwich. Keep an eye on the bottom by gently lifting it up to make sure you get a nice golden brown exterior. Once you achieve that, carefully flip it over, and cook on the other side until golden brown.

Remove it from the skillet, and plate it up.

Now if you have ever had a peanut butter and banana sandwich, well, this one tops that. For one, it is warm and creamy, and two, it has some wonderful, smoked Nueske’s bacon.

Biting into this sandwich yields nothing but excellence. An awesome  and crunchy exterior unveils this warm and creamy interior that when paired with the fruitiness from the banana and the smokiness from the bacon, well, make it, and you can see where I’m going with it. It’s just wonderful. A bit messy to eat, it is a great one to enjoy with a kid, and I believe this sandwich really cheered my daughter up.
