Strawberry Horchata

It’s one of my favorite drinks. It is something the waitresses bring to me when I arrive and have not ordered. It’s extremely delicious, and to boot it is just way too easy to make for the wonderful return. It’s horchata. But not like your usual horchata (well kind of). It has the addition of strawberry puree, making it even more delicious and one of my favorite sweet childhood favorite drinks… strawberry milk. This is strawberry milk on steroids, and trust me it is the perfect drink to make this time of year when the strawberries are in season and in abundance.

I came up with this recipe because I actually was craving tacos and my favorite drink to go with tacos is horchata, and I had about a half of cup or more of strawberry puree to use up from my panna cotta with strawberry glaze. The thought was perfect timing on my part, plus I hoped that my kids would just wash it down within a couple of days!

Let’s get started.

Ingredients:

Start by adding the rice, cinnamon sticks, and water to a blender.

Blend the mixture for about 1 minute without stopping. Towards the end feel free to pulse the mixture a few times. I love pulsing on the blender, don’t you?

Pour the entire mixture into a bowl, cover and let it sit out on the counter for at least 8 hours, or simply overnight.

Strawberry Horchata Ingredients

The following day, strain the mixture into a pitcher or container. You will save all of the liquid, and after lightly smashing the rice and cinnamon until you think no more liquid is present, then discard the solid.

To the pitcher, add in the milk, sugar, vanilla extract and strawberry puree. Cover the container, give this a really good stir or shake, and serve over ice.

The result is pure delight. It is very reminiscent of my favorite childhood strawberry milk, but again with that creamy rice flavor.   • 1 cup uncooked long grain rice
  • 5 cup of cold water
  • 2 whole cinnamon sticks
  • 1 cup almond milk or skim
  • 1/2 tbsp vanilla extract
  • 3/4 cup strawberry puree
  • 1/2 cup sugar
