Pizza Potato Skins

The best of both worlds. Pizza and potato skins combined as one. A great game day appetizer.

Ingredients

  • 1 potato
  • 2 tbsp unsalted butter
  • 1/2 tsp garlic salt
  • 1/2 cup marinara
  • 1/2 cup shredded mozzarella cheese
  • 6 slices pepperoni, quartered
  • 1 pinch chili flakes, optional

Instructions

  • Preheat your broiler
  • Bake or microwave your potato until fork tender. Let it cool.
  • Slice the potato in half, lengthwise. Spoon out the potato being careful to not go into the skin.
  • Add the garlic salt to the melted butter and give a good stir.
  • Brush the interior, and exterior of the potato skins with the salted butter.
  • Place onto a baking sheet and place under the broiler. Keep an eye on the skins as you want them to get lightly crispy and a deep golden brown. Once that is achieved, remove them from the broiler.
  • Place about a 1/4 cup of the marinara sauce into each potato skin and use a spoon to smooth the sauce so it cover the inside.  Add a 1/4 cup of mozzarella cheese into each potato skin, then divide the pepperoni into each potato skin, tucking them into and onto the cheese.
  • Place back under the broiler and cook until the cheese is fully melted, the pepperoni is slightly crisp, and when those babies are looking awesome to your liking. This is the time to get excited!

The potato, as simple as it is, may be the most versatile thing out there to cook with. Think about it. Everything from mashed potatoes, to hashbrowns, to tater tots, french fries, and on and on, and on. I love the potato so much that I probably cook with them at least once a week.  It’s been awhile however since I have created another potato skin, or posted an another recipe on this site. The original potato skin was a big hit on my site, and still is, for many many years, and that led me to create so many other awesome potato skins.

That’s when it occurred to me. The Green Bay Packers are now in the final playoffs and for whatever reason I already had game day food on my mind. That’s when I took it into my hands, built up my appetite, and came up with the Pizza Potato Skin. It’s everything you love about a slice of pizza but in a garlicy, buttery, crispy potato skin. It’s divine, and it will be a crowd pleaser if you are hosting a Super Bowl party this year.

The idea is simple. Bake whole potatoes, half them lengthwise, scrape out the potato (reserving for another use) being careful not to rip the skin, broil them until lightly crisp, load with your favorite pizza toppings, and finish cooking.

This recipe yields two potato skins, so cook as many as your heart desires.

Ingredients:

Remove them from the oven, sprinkle a bit of chili flakes on top if you desire, plate, and get ready to dig in.

Take one and give a nice bite. Crispy, buttery potato skin? Yes! A cheese pull with a perfect bite of pepperoni? Yes!

The rest is history. Let’s face it, it’s a darn good appetizer and gives you the best of both worlds. An awesome potato, and your favorite pizza topping (and yes, pepperoni pizza is my favorite but I’m a sucker for any type of pizza)!
