Roasted Garlic

Roasted GarlicI love garlic. I use it in almost all of my daily cooking, and I often joke with people that I use nearly a head of garlic a day, and it is not to keep the vampires away. Although I do think that it keeps my wife away at times. The great thing about garlic is that you can use it in so many ways, and one way that I love to use it is by simply roasting it. Roasted garlic is super simple to prepare and make that after thinking about it, I should roast it more than I do. Regardless, I recently roasted garlic and put them in the Autumn’s Mashed Potatoes.

Ingredients:

  • 1 head of garlic
  • 1 tbsp olive oil
  • Pinch of course salt
  • Pinch of fresh cracked pepper
  • Sheet of aluminum foil

Preheat your oven to 375 degrees. With a serrated knife, cut the edge of the tops of the garlic to expose the garlic. Place the garlic on the aluminum foil, drizzle the olive oil all over the garlic, sprinkle with salt and pepper, and bake in the oven for about an hour.

Let cool a bit, then use to your liking. You can spread on a lightly toasted Italian bread, or heck, simply plop them out and eat.
