Strawberry Horchata

Prep Time 5 minutes
Cook Time 5 minutes
Total Time 10 minutes
Servings: 8 cups

Ingredients

  • 1 cup uncooked long grain rice
  • 5 cup of cold water
  • 2 whole cinnamon sticks
  • 1 cup almond milk or skim
  • 1/2 tbsp vanilla extract
  • 3/4 cup strawberry puree
  • 1/2 cup sugar

Method

  1. Start by adding the rice, cinnamon sticks, and water to a blender.
  2. Blend the mixture for about 1 minute without stopping. Towards the end feel free to pulse the mixture a few times. I love pulsing on the blender, don’t you?
  3. Pour the entire mixture into a bowl, cover and let it sit out on the counter for at least 8 hours, or simply overnight.
  4. The following day, strain the mixture into a pitcher or container. You will save all of the liquid, and after lightly smashing the rice and cinnamon until you think no more liquid is present, then discard the solid.
  5. To the pitcher, add in the milk, sugar, vanilla extract and strawberry puree. Cover the container, give this a really good stir or shake, and serve over ice.
