Bacon Stuffed Waffles
I’ve said it before, and I will say it again, one of my kids LOVES bacon. As many of us love great bacon, this kid seems like no other. I mean he really loves bacon. If I could cook it everyday, and sometimes I dream of that, I probably would for this kid. Anyway, this past weekend, I asked that daily question to the kids. “Do you guys have any ideas for dinner?”. Immediately, my oldest son responded “bacon!”. My default response is always, “You know we just can’t have bacon.” Then he quickly fired off another response “Make those bacon waffles you made in past!”.
Yes, bacon waffles. I said it, and I’ve made these bacon waffles in the past, and they were pretty darn good. So bacon waffles it was. Just think of one great breakfast that includes Belgium style waffles drizzled with syrup or blanketed with powdered sugar, with a side of bacon. These bacon waffles please the palette with smoky, sweet, and a nice texture. Let’s just say they are awesome.
Ingredients:
- 2 cups of Aunt Jemima Buttermilk Complete Pancake and Waffle Mix
- 1 1/2 cups of cold water
- 1/3 cup of canola oil
- 11 slices of your favorite bacon, I use Nueske’s, cooked until crisp, crumbled
- Cooking spray
- Waffle iron
- Syrup
- Powdered Sugar
To make the batter, add the waffle mix to a large mixing bowl. Add in the water and oil, and mix until there are no more lumps. Fold in the crumbled bacon, and set aside for at least five minutes.
During this rest time, heat your waffle iron. Once the iron is hot, spray cooking spray on the grates, then ladle in enough of the waffle batter to fill in the base of the waffle iron. Turn the iron, and cook for about 4 minutes, turn, and continue to cook for a couple of more minutes, or until the waffle is a golden brown.
Remove the waffle, and slice your waffle. Repeat with the remaining waffles.
I must say there is some excitement when you serve these bacon stuffed waffles. The surprise of bacon hanging off of the edge of the waffles gets everyone excited and anxious to try them. The crisp exterior, along with the soft interior goes really well with smoky bacon, especially when served with syrup and powdered sugar.
