Grilled Potatoes and Onions
If there is one thing that reminds me of summertime, it has got be grilling, and one of my wife’s favorite dishes is potatoes and onions on the grill. I love this dish because not only can you make a big batch to feed a large group of people, but you can make it your own; changing what type of potatoes you use, the type of onion, and heck, even the ability to toss in other ingredients like bell peppers, chilies, etc.
Not to say it is summertime in Milwaukee yet, but the grilled potatoes and onions came out most recently. The weather was just perfect for grilling, and as I was looking for a side dish, I quickly threw together this dish. Trust me on this one, when I say easy, and cheap for that matter, it is a really quick throw together!
Ingredients:
- 3 large potatoes, cleaned, skin on, and cubed (to your liking)
- 1 large red onion, cut to your liking
- 3 cloves of minced garlic
- Salt
- Fresh cracked black pepper
- 3 tbsp unsalted butter
- 2 tbsp olive oil
- Aluminum foil
Preheat your grill, or oven for that matter to a medium heat. In the meantime, roll out two large pieces of aluminum foil. This will house all of your ingredients. To a bowl, toss in all of your ingredients, and mix well. Generously season with salt and pepper. Make a t-shape with your foil by laying one piece horizontally, and the other piece on top of it, vertically. Carefully lay the mixture onto the foil, and fold up your sides, and the top and bottom. Make sure you have a good seal here. If you need more foil to secure the mixture, feel free to use more. The goal is to get a nice solid housing for your potato mixture.
Place these on the grill for at least 45 minutes to one hour, rotating every 20 minutes or so.
When you are ready, place the foil package onto a plate, and slice into it, or carefully use your hands to open it. It is going to be very hot and let off a lot of steam, so be careful. Use tongs if you want as well.
